Mom’s “Manhattan Supper Soup”

My mom has always made this soup for special occasions to give to others (to celebrate births, to comfort a friend through difficult times or a death in the family). It is so yummy and is super easy to throw together. It needs to sit on the stove for about an hour, but needs essentially no attention other than a stir or two from time to time. I bought some homemade organic pumpkin seed bread from the grocery store, which was the perfect compliment to this yummy soup.

Manhattan Supper Soup

Ingredients:
1 lb ground beef (can also use ground steak, or ground turkey)
2 c coarsely chopped cabbage
1 large onion, thinly sliced
3 carrots, sliced
1 medium potato, cubed
1 T parsley flakes
1/2 of a 6 oz can of tomato paste
1 lb. can tomatoes
1 can condensed beef broth
2 cans water
2 tsp. salt (you can use a little less)
1/4 t sugar
10 oz of frozen peas
10 oz of frozen corn and/or green beans (Optional)

Directions:
Brown meat. Add everything else except peas. Bring to boil and simmer 50 minutes uncovered. Add peas, cover, cook 10 more minutes. Serve with fresh bread.

    • Can’t wait to hear what you think! I made it last week and can’t wait to defrost the leftovers for dinner next week. Also, would love to know what you’re going to do with all the extra cabbage (if you bought a head of cabbage like I did). I made cole slaw today, but no one in my house is a huge fan of cole slaw. Would love to try some other recipes that call for cabbage! :)

      • Perhaps they’d like the cole slaw a top a pulled pork sandwich? A favorite in our house. My pulled pork taco recipe is the same I use for pulled pork sandwiches when we want something quicker than the smoker. A little carolina sauce, and you have a fantastic sandwich. Mmmm, making myself hungry. :)

      • Still slaw, but you might like an apple cole slaw (http://www.paleoplan.com/2010/01-04/apple-coleslaw/) – it goes great with cilantro turkey burgers. Making your Manhattan soup tonight – hopefully it tastes as good as your leftovers from last week :)
